Updating: My Hair
Since I have the day off Friday I have a long overdue hair appointment that morning, Happy Birthday cut and color to me!  Here are some color looks I'm considering.

Trying out: New Recipes
I need something to spice up the rice we had Sunday so I found this simple recipe.  I modified it to use vanilla almond milk in place of regular milk and much less butter.  Over all a win, it was amazingly creamy.

Life
My week took over and I didn't find a spare minute to do any blogging.

I love when the time changes, who cares if I lose an hour of sleep the sun is still shining when I arrive home from work which means afternoon walks.  We've enjoyed getting a one lap walk in this week and I cannot wait for the longer days.  I just love that sign! Hehe

New Opportunities 

With a background in hosting promotional events and wicked love of fitness, I recently signed on with ProSupps as a demo rep and will be setting up sampling in stores and at events!  Outside our general grocery bill our supplements can get pretty pricey, working with this company will help eliminate that!  Best part its not a marketing company so I'm not actually going to try and sell you anything :)  #ihatemultilevelmarketingscams

Work
I wish!:
This is the last 5 day work week I have for the month of March, strategic planning has this girl only working 4 days for the next three weeks.  Its about time I used up some of this comp time!  No golf in the plans, but next Friday is a full on me day!

Crossfit

I set my February crossfit goal to get a bar muscle up, since I mastered it I was the overall winner of goals at the gym.  I noticed my coach creeping getting extra photos/video of me during our Wednesday workout but didn't really think much of it.  Turns out, I was the overall winner for goal accomplishment.  Which paid off since Crossfit Open 16.3 is 7 minutes of 10 power snatches and 3 bar muscle ups.

1st Birthday Party
We'll be throwing down with my former co-worker for her little girls 1st Birthday Saturday!  Brandon and I spent entirely too much time playing with kids toys in Target, we chose the Little Tikes Lil' Ocean Explore - Catch me Crabbie.  I secretly want her to open it so I can see just how awesome it is.  It claims to 'crawl' and the claws move!

C9 Sports Bra
I got to review a new Champion C9 Sports Bra courtesy of Influenster! It actually worked really well for my hot yoga class and at a price point of $17 you can afford multiple colors!


Experiments with Food
I feel like every time I go to eat its a mini science experiment.  With tracking macros most of the time you need to weigh food to know just how much you are consuming.  A friend recommend mixing powdered peanut butter in with my vanilla yogurt.  Amazing!  I also relate a lot more when watching Cops on just how much drugs are when they reference ounces and grams.

Best Worst Thing
If any of y'all wax you probably know that its the Best Worst thing ever!  I absolutely hate the 5-10 minutes of uncomfortableness but love the results.  Anyone considering taking the plunge?  I may do a post about it!

Crossfit Open 16.2
I see this one being a big-ol wash for me.  I did a run through this morning and I'm going to have to step up my game to make it in to the 2 rounds.  Making it to the 3rd could be an option but once I hit the front squats I'm not sure if I have the strength for 145lbs.

The workout is 4 min, every round you complete you add more weight to your squat clean bar and the time increases, with a cap at 20 min.

I love to eat, there for I must love to cook.  Baking is really my passion but lets be honest, those healthy desert options just are not the same.  However I've found that you can make some amazingly tasty and healthy breakfast, lunch, and dinner items!

I love Pinterest for finding and modifying recipes.  When I have no idea what to cook I simple search what ever major food item I have on hand and see whats out there that I can make happen.  Sometimes its a win and some times, we don't eat that item again!  Here are a list of 3 side items style dishes that we've enjoyed more than once!


Sides:

Avocado Corn Salsa
Do yourself a favor and make this, ASAP!  Damn Delicious usually doesn't disappoint, recipes are simple and if necessary easy to modify.
Avocado Corn Salsa - Tastes just like Chipotle's corn salsa but it's really a million times better!
Damn Delicious
Recipe as Written:
  • 2 cups canned corn kernels, drained
  • 1 jalapeño, seeded and diced
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 avocado, halved, seeded, peeled and diced
My Modification - Makes 2 large or 4 small servings
(I eat a macro based diet so I'm always converting things to grams/oz)
1 cup can corn kernels, drained (approx 270 grams)
1/4 cup diced red onion (approx 2 oz)
1 lime, squeezed 
1/4 tsp salt
1/2 tsp sugar
1 avocado, diced (approx 60 grams)
Cilantro to taste (I like a lot)

Or as I like to say, guilt free potato salad.

Recipe as Written
  • 3 pounds red/new potatoes
  • 1 large red onion, cut into thick slices
  • 1 tablespoon coriander seed
  • 1 pinch cumin seed
  • 1 tablespoon oregano leaves
  • 2 serrano chiles, minced
  • 3 slices bacon, crisply cooked and coarsely chopped
  • 1 bunch fresh cilantro, thick stems discarded, coarsely chopped
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon coarse black pepper

My modification - Makes 2 servings. 

2-3 new red potatoes (I aim for about 110-120 grams uncooked each)
2 slices bacon, cooked and chopped 
1/2 red onion chopped, saute in bacon grease for extra flavor
1 tablespoon olive oil
1/2 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp pepper
Ground Oregano to taste, sprinkled over 
Ground Cumin to taste, sprinkled over
Cilantro to taste

Boil potatoes until soft, dice and spread out in baking sheet
Fry bacon, drain grease and use small amount of grease to saute onions
Top diced potatoes with onions and bacon, drizzle over olive oil and red wine vinegar
Stir
Sprinkle over ground oregano, cumin, and cilantro
Bake at 350/375 OR cover and cook later!

Y'all know how much spaghetti squash you get when you cook one and then your like what do I actually do with this?  Here's the answer!

Recipe as written
  • 1 package (8 oz) lower fat cream cheese
  • ½ cup Greek yogurt or low fat sour cream
  • 1/2 cup Parmesan cheese, shredded
  • 1 cup part skim mozzarella cheese, shredded
  • 1 cup spaghetti squash, cooked
  • 1 cup cooked spinach
  • 4 garlic cloves, minced
  • Cayenne pepper
  • Salt

My modification - 2 servings 
I even took this one step further and used it as a stuffing for mini sweet peppers 
5 oz spaghetti squash (cooked)
8 oz spinach, cooked
2 oz low fat cream cheese
1 oz skim mozzarella cheese, shredded
1 oz Parmesan cheese
1 clove garlic
dash salt and cayenne pepper to taste
6-8 small sweet pepper, tops cut out and seeds removed

Saute spinach, add in spaghetti squash - stir together
Add in cheese and garlic - allow to melt
Sprinkle salt/cayenne pepper
Stuff peppers, place tops up into a small oven safe dish cover peppers with any remaining dip.
Bake a 400 for 5-8 min until peppers are tender

I'm excited you are here and boy do I have a TON of plans.  I'm currently working on  my 30 before 30 list as I'll be turning 29 this month.

Weekending

How do the weekends seem to fly by?

I had a day of silence on Friday when I left my phone at the gym, going until 5pm without cell phone was really weird but kind of nice.

Friday night Brandon and I headed back to the gym for a 2nd round of the crossfit open 16.1 workout.  We'd done it earlier in the day but I wanted another run at my score.  I completed 156 reps that morning and managed 179 reps that afternoon!


Since I tacked that workout twice, We treated ourselves to CiCi's Pizza, epic cheat meal.


If I ever make it 'big' in life I'm pretty sure hiring a housekeeper is on my to do list, that or just not working and being a housewife.  Seriously does anyone else feel like all Saturday is for is cleaning, laundry, and catching upon all the work you couldn't get to during the week!?

I just cannot do the daily cleaning lists, I love the feeling of the house being completely clean at one time.

Does it seem like everything happens at the same time, I couldn't tell you how many people are expecting little ones this spring, but I attended a quaint shower for a dear friend Saturday morning.  The shower favors were bottles of champagne to pop upon the birth!

I also spent some time Saturday afternoon doing meal prep for the week, I'll be sharing a post shortly on how I meal plan and prep for success! Its not as hard as it seems and saves you tons of time each night!

Did anyone else binge on Fuller House?  We did 5 episodes and I loved every minute.  Full House was without a doubt my favorite show growing up!  I didn't know what time on the clock it came on but I sure knew what part of my day was dedicated to those precious 30 minutes.

Weekends are for my favorite breakfasts, waffles, eggs, bacon, and never ending cups of coffee.



We've found Andy Stanley to be our favorite pastor to watch on Sunday mornings.  Although we do need to find a home church and get more involved I love his messages.

Sunday afternoon we headed back to the gym for Brandon to tackle 16.1.  He did slightly better than his run though Friday morning, but 16.1 score goes to the wife!


We did a quick Marshall's run and then spent the afternoon with our good friend Vicky and her little girl Ella, who found it very entertaining to toss her dolls off the back porch making us continue to retrieve them!

The weekend was wrapped up with packing up Poshmark sales and The Walking Dead!  I'm not so sure what I'll do if Negan comes into the scene and kills off a major player!

the next best thing to taking a day off is leaving early on a Friday, three cheers to that!  Work and adulting have really taken a toll on my the last few weeks so I'm thankful to get out a bit early and just breath!

Crossfit Games Open
Its hard to believe this is my 4th crossfit games, 3rd officially registered!  I'll be doing the workouts once in the morning with my class then returning again for a 2nd run in the afternoon. 16.1 first run I completed 6 full rounds at RX (as written)

Favorite Snacks under 200 Calories.

I almost hated to title this with calories, lets be real; there is more to what you eat than just the calorie number.  Good snacks should include all macros: fats, carbs, and protein.  If you're anything like me you're always looking for yummy snacks!

So maybe this should be called simple to fix, easy to grab, healthy alternative snacks.

I grabbed these from Target, because they were an additional 10% off with cartwheel and let me just say, best spur of the moment purchase  This bar satisfies your sweet tooth and doesn't hurt your waist.

I've only tried the Chocolate Chip Cookie Dough and I don't think there is any reason to try another.  But we also went back and grabbed the Salted Caramel and once again, tasty! 
Chocolate Chip Cookie - 100 calories - 2.5 grams fat - 17 carbs - 5 grams protein


If you asked me to pick a favorite, Id say Mint Chocolate Chip or Chocolate Chip Cookie Dough (see a trend here)  The mint is new and its amazing, even husband who says he doesn't like mint stuff enjoys stealing these from my cookie jar.  The cookie dough is a staple and if you heat it for 20-25 seconds in the microwave its like eating a cookie straight from the oven.

Greek Yogurt 

I'm loving the Dannon Light & Fit Greek Blends along with the Yoplait Greek 100.

The Yoplait Greek 100 can vary but flavor when it comes to macros.  But the Vanilla and Coconut flavors are the same and the best overall pick.

Duh! But even with fruits and veggies you have to be mindful of how much you are eating.

Jiff Natural Peanut Butter 1 tbsp=16 grams 95 calories - 8 grams fat - 4 carbs - 3.5 grams protein
Total 150 calories - 8 grams fat - 18 carbs - 3.5 grams protein

Watermelon
200 grams - 60 calories - 0.5 grams fat - 16 carbs - 1 gram protein

I don't eat these often but they are nice to have on hand, occasionally I need something packed with fat.  You probably just rolled your eyes at that and thought who actually eats fat.  Raises her hand slowly.  Because you can get these in packets its automatic portion control.
180 calories - 14 grams fat - 11 carbs - 5 grams protein

Popcorn 
Any Fat Free popcorn, topped with some seasoning.  I love the white cheddar Kernel Seasons but the options are endless.  Regular size bags will still have you coming in under 200 calories, but to be safe with your carb intake, look for the individual size bags.

Tuna
Chunk Lite Tuna Low Sodium Pouch with avocado and hot sauce.  
1 tuna pouch 70 calories -  0.5 grams fat - 0 carbs - 17 grams protein
Avocado (40 grams) 60 calories - 6 grams fat -  3.6 carbs - 0.8 grams protein
Total 130 calories - 6.5 grams fat - 3.6 carbs - 17.8 grams protein
